Fried banana bites

These fried banana bites are so fun and easy to make during the week! It makes a large serving for two or three people. It consists of banana slices, tossed in a pancake-like batter, and fried until browned. I first saw this trending on Instagram and decided to give it a shot! This breakfast is so heavenly with whipped cream or ice cream.

You will need ripe bananas for this recipe. The bananas need to be just ripe not too overripe – these are mushier which makes it difficult to work with. Slice them into thick circles. You can substitute the flour, sugar, salt, baking powder ingredients with pancake mix. Toss the sliced bananas into the flour mixture and shake off the excess batter. Fry immediately in batches or as many that can fit your frying pan. It takes close to 5 minutes for the bites to brown nicely on one side. Flip individually with a fork or spoon and continue frying for another 3-4 minutes.

Serve these fried banana bites warm with your favorite dessert toppings and sauces. This recipe tastes like mini pancakes stuffed with bananas so they are already very sweet! Ingredients

3 bananas, peeled and sliced
1/2 cup almond/dairy milk
1 & 1/2 cups all-purpose flour
3 teaspoons baking powder
Pinch of salt
2 tablespoons granulated sugar
Cooking oil

Instructions

  1. Heat a few tablespoons of oil in a frying pan.
  2. Mix the milk with the flour, baking powder, salt and granulated sugar. This is the batter.
  3. Dip each banana slice in the batter and fry in the greased frying pan until browned on both sides.
  4. Serve with whipped cream or ice cream.
