This is literally one of the juiciest chicken recipes I have made in a long time. This bacon-wrapped chicken breast is not even baked in the oven but 100% on the stove. The magic happens because the juices from the bacon penetrate the chicken as well as providing extra drip. It is so delicious! I used this in my BLT recipe and it was so perfect.

You will need to cook this bacon-wrapped chicken breast on medium heat. You want the bacon to get very browned but if you cook on a higher heat the bacon browns faster than the chicken. So you will end up with crispy bacon and uncooked chicken in the middle. So cook this nice and slow on both sides. I also like to sear the edges that don’t touch the frying pan. If your frying pan has a lid you can cover it in the latter stages so that the steam cooks the chicken evenly.

For this bacon-wrapped chicken recipe, pound the chicken breasts until they are flatter on the top. Firstly, I wrap the top of the chicken breasts with cling wrap on a cutting board or stable serving area. Then I like to use my rolling pin to pound at the chicken on the board. It evens out the surface area so that the chicken cooks evenly since it’s being cooked on the stove. The internal temperature of the chicken should read at least 165°F/73°C. You can serve this with baked potatoes, alfredo or fried rice.

Ingredients

8 bacon rashers

2 chicken breast, pounded flat and cut in half

 2 tablespoons hot sauce

1 teaspoon table salt

1 teaspoon ground black pepper

2 teaspoons garlic powder/minced garlic

1 tablespoon parsley flakes

2 tablespoons cooking oil

Instructions

  1. Mix the hot sauce with the salt, black pepper, and parsley in a bowl. Spread this over the chicken breast until it is evenly coated.
  2. Wrap each seasoned chicken breast piece tightly with a bacon rasher.

  3. Heat the oil in a frying pan on medium heat and fry the chicken breast for about 6 minutes on one side, flip and fry for another 6-7 minutes. Then sear the sides for about 4 minutes to ensure that it is evenly cooked. 
  4. Serve in a sandwich or with your favorite carbs.
