Rainbow ginger churros

These ginger churros were done for Pride Month and are so soft and delicious. They are deep fried dough which I coated with a brown sugar cinnamon mix and dipped into melted dark chocolate. They are usually found at festivals or summer fests and are crunchy on the outside and super soft on the inside! I added sprinkles to these ginger churros for a fun effect and to mark the spirit of Pride month.

A piping bag with a star tip is usually used to make churros. The dough is prepared in a saucepan on the stove first and then left to cool to room temperature before being deep fried. Then it is piped into hot oil and deep fried for about 2 minutes on each side. I took a bag of dark chocolate chips and melted them in a bowl. Then I dipped the churros into the bowl of melted chocolate and refrigerated it for a few minutes.

Ingredients

Ginger churros

1/2 cup unsalted butter

1 cup water

2 cups all-purpose flour

1 tablespoon granulated sugar

2 teaspoons ground ginger

1 teaspoon ground cinnamon

2 cups neutral cooking oil (I use canola)  

 

Dipping sauce

1/2 cup brown sugar

1/2 cup granulated sugar

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1 cup chocolate chips

 

Instructions

Ginger churros

  1. Melt the butter in a large saucepan.
  2. Add the water and whisk in the granulated sugar, cinnamon, ginger and stir in the flour gradually.
  3. Turn off the heat and let it cool for 5 minutes.
  4. Heat oil in a large frying pan (I use a 10-inch cast-iron skillet).
  5. Transfer the churro dough into a piping bag with a star tip and pipe cylinder shapes into a U-shape directly into the hot oil.

  6. Use a spatula or sharp utensil to cut off the ends.
  7. Fry until golden brown for about 2 minutes on each side.
  8. Let the fried churros cool on a wire rack.

Dipping sauce

  1. Mix the brown sugar, granulated sugar, cinnamon and ginger (follow dipping ingredients).
  2. Dip each fried churro into the sugar mixture in the previous step.
  3. Melt the chocolate chips in a bowl in the microwave for 2 minutes and dip the end of each churro into the melted chocolate.
  4. Shake off the excess and transfer to a wire rack or place on parchment paper.
  5. Garnish with your favorite sprinkles first before refrigerating for 15 minutes.
