Burrito tacos with crispy chicken

It’s Super Bowl weekend and what better way to watch the games than with tacos. These tacos hit a little different because they are made with burrito fillings. So you have refried beans, avocado, grated cheese, cooked meat, and cooked rice. You can even go extra and put in onions, tomatoes and shredded lettuce. Whatever you usually like in your burrito goes in here. These burrito tacos are super duper easy to make and very low-maintenance.

For these tacos I used chicken bites tossed in barbecue sauce, but you can use any other meat you like. If you want to learn how I made the crispy chicken, check out my Sweet Thai chili chicken Po’ boy recipe. Pulled pork, ground beef and shredded chicken breast are great options. I fried them until they were super crispy and simply tossed them in barbecue sauce. Beans are like compulsory in a burrito, so I opted for refried beans. Black beans is also another popular choice. I diced the avocados but you can mush them up in a guacamole style. For cheese, I usually go with cheddar cheese. This time I went for marbled cheese which has a milder taste than sharp cheddar. I don’t use mozzarella because it is a bit too mild for me. When you combine mozzarella with other cheeses in a burrito, that’s when it’s fire.

I don’t recommend using hard-shell tacos because they don’t have the flexibility you need to fold over the tacos. Plus, they tend to be pretty narrow and stiff so you might be limited to the amount of fillings you can place in each taco.

Ingredients

1 cup cooked rice

1 cup refried beans

4 medium tortillas

3-4 avocados, pits removed and diced

2 cups cooked meat of your choice

2 cups grated cheddar cheese

Cooking oil

Lime wedges to serve  

Instructions

  1. Spread about two tablespoons of refried beans across each tortilla.
  2. Lightly grease a frying pan with a few tablespoons of oil.
  3. Transfer one tortilla at a time to a lightly greased frying pan on medium heat.
  4. Add a handful of cheese, rice, avocado, meat, more cheese in the center of the tortilla.
  5. Flip in half like an omelette once all the cheese has melted.
  6. Repeat steps 2-5 for the remaining tortillas.
  7. Serve warm with your favorite dipping sauce and lime wedges.
