Crispy kebab chicken sandwich

This spicy kebab chicken sandwich is so delicious and juicy! I used kebab powder on this fried chicken breast and put it in between toasted bread along with onions, tomatoes and spicy kebab sauce. Consider this a spicy version of the classic fried chicken sandwich. The chicken breast is pounded flat for best results! This gigantic sandwich serves one actually but can make room for two!

The chicken breast should be pounded flatter to get an even surface. Then it is coated in whisked egg, followed by the seasoned flour. You can repeat this step for a bigger layer of coating around the chicken. This is called double dredging. I add cornstarch into the flour to make the coating extra crispy so you don’t have to double dredge it. The next best substitute after cornstarch is potato starch.

The fried chicken, the sauce and toppings come together really nicely! Once the chicken is fried, let it cool a bit, then toss it generously in kebab powder. The sauce is basically mayo mixed with salt, pepper, vinegar and kebab powder. This kebab chicken sandwich is crunchy, spicy and so juicy!

Ingredients

Chicken

1 skinless and boneless breast, pounded flat
1 teaspoon table salt
1 teaspoon ground ginger
1 teaspoon ground basil
1 teaspoon garlic powder
 

Coating

1/2 cup cornstarch
1/2 cup all-purpose flour
1 teaspoon table salt
1 teaspoon chili pepper
1 teaspoon parsley flakes
 
1 large egg, whisked
 

Sauce

1/2 cup mayonnaise
1/2 teaspoon salt
1 teaspoon kebab powder
1 teaspoon chili powder
1 teaspoon vinegar
 

Toppings

1/2 cup kebab (suya) powder, to serve
2 slices bread, toasted
1 medium tomato, sliced
Sautéed onions
Toasted bread or buns
 

Instructions

  1. Heat the oil in a frying pan until 350°F/175°C.
  2. Mix the chicken ingredients in a large bowl .
  3. Whisk the coating ingredients together in a separate bowl.
  4. Whisk the egg in a large bowl.
  5. Dip the seasoned chicken into the egg bowl, followed by the coating bowl.
  6. Shake off the excess and fry until crispy.
  7. Fry for about 8-10 minutes in both sides on high heat. Leave to cool on a wire rack. Toss in the kebab powder thoroughly.
  8. Mix the sauce ingredients in a bowl and set aside. Spread this across the toasted bread and add the fried chicken, tomatoes and sautéed onions. You can even add fried bacon.
  9. Serve immediately.
