Cornflake chicken nuggets

These are cornflake chicken nuggets which are breaded in crushed cornflakes and fried until crispy. These are really yummy and such a good snack! I used cornflakes instead of breadcrumbs.

When it’s time to crush the cornflakes, you can either use a rolling pin or a food processor. The texture should be similar to breadcrumbs. The best type of chicken to use here is boneless and skinless chicken breast. They are thicker and fry so well after being breaded. I tried this cornflake nugget recipe with chicken thighs and it turned out fine. The only difference here with chicken thighs was that it was much thinner. It didn’t have that chunky nugget vibe that we all love. The cornflake coating also didn’t stick smoothly to the chicken thighs. It would come off often and not feel as sturdy.

The order of breading is as follows: the seasoned flour, then the egg wash and then the crushed cornflakes. The cornflake chicken nuggets are then fried for about 10 minutes on both sides until lightly browned. Let it cool on a wire rack to cool completely. These go great solo or with roasted potatoes. Ingredients

2 cups cornflakes, crushed
2 large, boneless and skinless chicken breasts
2 large eggs, whisked
2 teaspoons table salt
1 tablespoon garlic powder
2 teaspoons cayenne pepper
1 tablespoon parsley flakes
1/2 cup all-purpose flour
1&1/2 cups canola oil for frying

Instructions

1. Heat oil in a frying pan. 
2. Cut chicken into 2 inch squares.
3. Whisk eggs with 2 tablespoons of water.
4. Mix flour with salt, cayenne pepper, garlic powder and parsley.
5. Roll chicken in the seasoned flour in the previous step, dip it next into the egg mixture, shake off the excess, then pat into the cornflakes.
6. Place the finished breaded chicken on a large plate.
7. Fry as many breaded chicken that can fit in a frying pan without touching on medium heat for 10 minutes. Fry on other side for 10 minutes as well.
8. Let the fried nuggets cool on a wire rack.

9. Serve with your fave dipping sauce and enjoy!
