Pineapple ginger juice

Ginger drinks are so unique in Accra so I made a pineapple ginger juice. This homemade ginger juice is so fresh and made from scratch. It is sweet and slightly spicy. You will need a large capacity blender that can hold close to 8-10 cups of liquid. This juice is so refreshing and awesome for cooling off in the summer. It is also a large batch recipe so it serves up to a litre worth of juice.

The ginger syrup is very easy to make. Boil about 2 cups of ginger with sugar and water. I used a pack of frozen ginger which comes peeled and chopped already. Once you strain it, it becomes a ginger syrup. The next step is to blend it with fresh pineapple and lots of water. Fresh mint leaves could be a fun addition to this recipe. You can also use tinned pineapple instead of a whole pineapple which is worth about 4 cups. Serve this right away or you can strain into a huge jug for smoother results. If you’re looking for a soda vibe, top this off with ginger ale or Sprite.

You can use this pineapple ginger juice recipe in a pineapple margarita or pineapple Paloma.

Ingredients

Ginger syrup

500g peeled ginger

3 cups granulated sugar

2 cups water

 

Juice

6 cups additional water

1 whole pineapple, peeled and chopped

Pineapple rings to serve

Tray of ice cubes

Instructions

  1. Boil the ginger syrup ingredients in a saucepan for 30 minutes.
  2. Let it cool then strain into a blender.
  3. Blend with the pineapple and additional 6 cups water until smooth.
  4. Serve over ice cubes in tall glasses.
