Chocolate-covered marshmallow peanut brittle

Brittle is made from crushed nuts and sugar. Peanut brittle is really popular in my hometown and served on really important occasions. It is actually nicknamed “nkate cake” which loosely translated means “nut cake”. This makes sense because it is a top-tier candy. It’s a sticky, sugary snack that is served at parties and festive occasions. Because it is so sugary it is something we make once in a while.

I took this peanut brittle a step further by glazing it in melted chocolate. It adds a nice dimension to regular brittle and is so perfect for Christmas. Peanuts are commonly used for this recipe but you can experiment with cashews, almonds, or pistachios. The trick is to add the melted chocolate after the peanut brittle has hardened. You can also make this more interesting by using melted white chocolate or cookies and cream flavored chocolate.

The marshmallows make this so yummy but if you don’t like marshmallows you can skip this. The important thing is ensuring that you have crushed the nuts into smaller pieces. They should look chopped but not crushed to dust. This is going to be a snackable candy so you don’t want to bite into whole peanuts. This is great for both holiday season and Halloween so you can decorate the top of the brittle with icing too.

Ingredients

2 cups peanuts, crushed

2 cups milk or semi-sweet chocolate chips

20 large marshmallows

1/4 cup butter

1 cup granulated sugar

Instructions

  1. Before you begin this recipe, have a large baking tray lined with parchment paper ready.
  2. In a saucepan on medium heat, melt the butter and sugar together.
  3. Then add the marshmallows to the saucepan. It will be bubbly, with white swirls. Wait for everything to melt completely into one brown color.
  4. Fold the crushed peanuts into the mixture and make sure it is coated completely in the mixture.
  5. Take it out of the saucepan right away and transfer it to the baking sheet from step 1. It will be sticky and start hardening as it cools so you have to work quickly. This is your brittle base.
  6. Spread it into a flat layer using a cake spatula. Once you are satisfied, melt the chocolate chips in a bowl in the microwave.
  7. Spread this melted chocolate over the brittle base in the baking tray.
  8. Refrigerate this for at least 3 hours to let the chocolate harden.
  9. Break or chop into pieces and serve as desired.
