Vegetarian rice paper rolls (Vietnamese rolls)

This vegetarian rice paper roll recipe is such an oldie but a goodie. It’s a really healthy snack but still so delicious. It’s almost as good as a bowl of cookies. I swear. I make these rolls when I get mega cravings and they are so ridiculously easy. This recipe consists of chopped carrots, mangoes and cucumbers all rolled into small rolls. They are a one-day kind of recipe so no leftovers here! The rice paper used in this recipe gets softer and stickier as time goes on so you will be biting into a soggy mess the next day.

Just like with tacos, make just enough with the ingredients you have. So all you need are fresh mangoes, cucumber and carrots. I like to keep these ingredients prior to making this recipe so that the rolls are super chilled. It is a great summer snack for sure. It is sweet, slightly crunchy and so divine on a hot summer day. I chop them into slim, short sticks so they are easy to roll up in the rice paper and are just easier to work with.

The sheet needs to be soaked in very warm water for this to work out. You may also need to change the water if it gets cold as you wrap the rolls. Rice paper sounds fancy but you can usually find it in the pasta section in the grocery store. Place each sheet in the warm water, for up to 12 seconds, and then place it on a dry kitchen towel. Place the filling in the middle and roll the outer edges of the rice paper sheet. It might feel slightly hard but should be pliable enough to roll it like a burrito. Remember: a damp rice paper sheet only gets softer as time goes on. Cut the rolls in half and serve as quickly as possible.

Ingredients

2 red mangoes, peeled and sliced into thin strips

1 English cucumber, sliced into thin strips

3 large carrots, trimmed and sliced into thin sticks

Rice paper sheets

Instructions

  1. Fill a large bowl halfway with warm water. If it turns cold, change it with warm water.
  2. Dip the rice paper sheets into the warm water until you feel the edges soften up.
  3. Place the damp rice paper on a towel and fill it in the center with a small amount of mango, cucumber and carrot strips.
  4. Roll like a burrito.
  5. Repeat steps 2-4 until all the ingredients are used up.
