Boozy kiwi mint vodka lemonade

This kiwi lemonade is very fresh and very much summer! That’s because it was originally posted this spring, but this is a website relaunch so it’s okay if this is reposted in the winter. It is so crisp because of the mint and everything is blended. So you don’t need to strain anything or add anything fancy. All you need are kiwis, booze, sweetener, fresh mint, lemon juice and water. I highly recommend using freshly squeezed lemon juice as opposed to lemon concentrate. Using fresh lemons make your lemonade taste fresher and just nicer, in my opinion.

The kiwis are peeled and the mint leaves are plucked off the sprigs. I just want to emphasize that you only need the mint leaves not the entire sprig. I used honey for my sweetener choice but maple syrup and simple syrup work too. You can use this spiced simple syrup, for example, if you want to turn this kiwi lemonade into a fall vibe. I like adding the syrup after the lemonade is blended because I found that the syrup sometimes sticks to the bottom of the blender. So I mix it in after to ensure that it dissolves properly into the lemonade.

You could strain this lemonade to make it super smooth but you can barely taste the blended particles. I think not straining it is also more fun that way because it just feels more fresh. You can enhance this with a splash of mint extract too!

Ingredients

4 kiwis, peeled

1 cup lemon juice

355ml can club soda

1/2 cup honey or simple syrup

1/2 cup mint leaves

1 cup vodka

Lemon wedges to garnish

Mint sprigs to garnish

Instructions

  1. Blend the kiwis, vodka, lemon juice and mint leaves together until it looks as smooth as possible.
  2. Transfer to a jug and mix with the honey/simple syrup and stir until completely dissolved.
  3. Add the club soda and mix.
  4. Serve this chilled over ice cubes with lemon wedges and fresh mint sprigs.
