Mint daiquiri

A daiquiri is one of the popular classic cocktails. It is fairly bittersweet and an overall simple drink recipe to whip up. This mint daiquiri has a fresh and crisp taste, thanks to the homemade mint syrup. Cinco de Mayo is coming up this Thursday, so I thought I’d share this fun twist for those who are looking to turn up.

The mint syrup is super easy. You guys know by now how much I love a customized syrup. Mint syrup consists of equal parts water and sugar which is boiled until dissolved and then mint leaves are boiled in this mixture. Once the leaves are wilted and the mixture gets a greenish hue, the mint syrup is halfway ready. The final step is letting the mint leaves steep (soak) for as long as possible in the liquid. After a few hours, strain the mixture and whatever is leftover is your syrup. The recipe for the mint syrup makes a large batch because you can use it in other cocktails and mocktails.

The mint syrup

Place the cocktail glass (a coupe glass is commonly used) you’ll be using to serve the mint daiquiri in the freezer right before you start preparing the cocktail. This is because a daiquiri isn’t usually served with ice so this helps keeps it chilled longer. Shake the syrup, lime juice and white rum over ice in a cocktail shaker or mason jar. Then strain it into the chilled glass that you prepped. You can garnish with fresh mint sprigs or lime wedges or both like I did. Enjoy!

Ingredients

Mint syrup

1 cup water

1 cup granulated sugar

1 cup mint leaves

 

Daiquiri

2 oz white rum

1 oz lime juice

1/2 oz mint simple syrup

1 cup ice

Mint sprigs to garnish

Lime wedges to garnish

Instructions

Mint syrup

  1. Boil the water and sugar together in a saucepan on medium heat until the mixture looks transparent.
  2. Add the mint leaves and let it continue to boil, uncovered, for 15 minutes.
  3. Turn off the heat and let the mint leaves steep for at least 2 hours or more.
  4. Keep refrigerated for up to 5 days in a clean mason jar.

Daiquiri

  1. Place a coupe glass in the freezer for about 5 minutes.
  2. In a cocktail shaker or mason jar, shake rum, lime juice, mint simple syrup and ice.
  3. Strain into the chilled coupe glass and garnish as preferred.
  4. Serve chilled.
