Ground chicken tacos

Delicious ground chicken tacos which are all cheesed up in a taco. The plot twist is that these chicken tacos don’t really need much. They don’t even need cheese-they are completely delicious on their own thanks to the broth it is cooked with. These tacos are a convenient lunch on the weekday and totally worth the hassle. I recommend serving these chicken tacos with hot sauce or barbecue sauce.

Ground chicken is similar to ground beef but much softer and squishy in texture. I picked this because I made a similar taco recipe in my book, Cozy Delights, which uses ground Italian sausage meat and is topped with a creamy avocado sauce. I’ll be sharing this avocado sauce below because it goes really well with this too.

Making the avocado coconut sauce

To make this avocado sauce, blend the following ingredients until smooth:

  • 2 ripe avocados, peeled and pitted
  • 1/2 cup coconut milk
  • 1 tablespoon dried chives
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon table salt
  • 2 teaspoons lime juice

This creamy sauce lasts for about a day in the fridge. You can use this not just in your tacos, but also your burritos, nachos or as a dipping sauce. So don’t be afraid to serve this generously because leftovers are not ideal. Enjoy!

Ingredients

Cooking oil

1 onion, finely chopped

500g/ 1lb ground chicken

1 teaspoon table salt

2 teaspoons cayenne pepper

1 tablespoon dried parsley

1 teaspoon garlic powder or minced garlic

6 medium tortillas

2-3 limes, cut in half

 

Taco toppings

Chopped tomatoes

Chopped jalapeños

Barbecue sauce (see above post for avocado coconut sauce)

Grated Monterey Jack cheese (optional)

Fresh cilantro, finely chopped

Instructions

  1. Mix the ground chicken with salt, cayenne pepper, parsley and garlic.
  2. In a large frying pan, drizzle a few tablespoons of cooking oil and fry the onions on medium heat until they are lightly browned.
  3. Add the ground chicken to the same frying pan, breaking it apart into smaller chunks. It will feel squishy so that's normal.
  4. Once the chicken is cooked and looks greyish in color, add the broth. Let it simmer , uncovered, on medium heat until the broth dries out. Check the salt and seasoning level at this stage, and adjust as needed.
  5. If you want to use the cheese, sprinkle it across the top of the chicken. Once all the cheese is melted, mix it well with the chicken and turn off the heat. This is your taco filling.
  6. Arrange 6 medium tortillas on a large serving board.
  7. Add a few tablespoons of the the taco filling in the center of each tortilla ad add the toppings you wish.
  8. Garnish as preferred and serve with lime.
