It’s spring so let’s make some peach oatmeal. Oat recipes are trending like crazy so this was definitely on my bucket list. It is cooked with mainly water, coconut milk and actual peach slices which gives it a fruity aftertaste. This recipe reminds me of those peaches and cream instant oats in the package.
It is best to use large flake oats because they have a soft texture. Avoid steel-cut oats because they are as hard as nails. Instant oats cook too quickly for this recipe. In addition, get a can of sliced peaches for this peach oatmeal. You can use even more than one can if you want your oatmeal to be filled with loads peaches. I love using the can of peaches because it comes packed with peach juice/syrup. This syrup surrounding the peach slices will be added to the oats as it is being cooked.
Coconut milk gives this peach oatmeal a really creamy taste so don’t skimp on on this. Another great substitute would be oat milk actually since this is an oat recipe and oat milk is really high fashion these days. Serve this oatmeal with a sprinkle of ground cinnamon for a lovely touch. My microwave pumpkin almond oatmeal also hits the spot.
Ingredients
2 cups water
3 cups rolled oats (large flake oats)
398ml can peach slices
400ml coconut milk
1/2 cup granulated sugar
Ground cinnamon to serve, optional
Chopped fruit to serve, optional
Instructions
- Mix water, coconut milk and oats in a large saucepan and let it cook for 10 minutes on medium heat, stirring occasionally.
- Add the can of sliced peaches along with the juice surrounding it, sugar and let it cook for another 10 minutes on a lower heat.
- Serve warm in bowls and sprinkle with cinnamon and top with chopped fruit.
