Steak tacos will never go out of season. These garlic herb tacos are made from garlic herb pan-seared steak, which is then sliced and served on fresh tortillas. You could also use corn tortillas or hard taco shells for this recipe. I usually like to garnish my tacos with green onions, cilantro and hot sauce. This is an awesome weeknight dinner or quick lunch on a busy day.
Making sure the steak is not over-cooked is the important part. It’s cooked just long enough to get a nice sear on the exterior but the interior is still medium rare. If it is completely cooked through, I found that the steak becomes really chewy-which isn’t necessarily bad. However the steak is going into tacos so a chewy texture would make eating these tacos a pain. Try to go for thicker cut steaks like a good sirloin or tenderloin. This is because flat steaks will dry out on the stove much quicker and are better suited for stir-fries or stews.
You’ll need butter, garlic cloves and fresh herb sprigs for this recipe. For herbs I usually go with rosemary and thyme. For a juicy steak, let it rest for at least 10 minutes after it is cooked, before slicing into it. This allows the moisture and internal juices to work its way throughout the meat. That way you get juicy meat throughout the steak, rather than dry meat here and there.
Ingredients
1 kg/2.2 lbs sirloin steak
1 tablespoon ground black pepper
1 tablespoon garlic powder or minced garlic
1 teaspoon table salt
1 tablespoon lemon juice
4 garlic cloves, peeled and chopped
1/4 cup unsalted butter
1/4 cup fresh herbs (I used rosemary and thyme)
Taco toppings
Chopped jalapeños or green peppers
1/4 cup chopped cilantro
1 cup grated cheddar cheese
4 medium tortillas
Instructions
- Season the steak with salt, pepper, garlic and lemon juice. Let it sit for 30 minutes.
- Prepare the toppings for your tacos.
- Heat the tortillas on a hot skillet until lightly browned, and set aside.
- Melt butter in a large frying pan and add the garlic cloves.
- Add the steak and top with fresh herbs.
- Sear the steak for 4 minutes on each side, basting with the melted butter.
- Take the steak off the stove and let it rest for at least 10 minutes before cutting into it.
- Cut the steak into thin strips and place a handful of steak in the toasted tortillas from step 3. Add any other topping you like to the tacos.
- Garnish with fresh chopped cilantro and serve warm.
