Cucumber kiwi mojitos for Pride month

These cucumber kiwi mojitos are fruity, sweet and also minty. They are so refreshing for the summer! The very first cocktail I made when I started this blog in 2018 was a cucumber mojito (pictured below). It has been revamped with kiwis and is literally the perfect glow up! June is also Pride Month on my side of the world so these are really a cute aesthetic when topped with colorful gummy bears. I’m happy that these cucumber kiwi mojitos make more than one serving because one glass is simply not enough.

Muddling the mint leaves is key to getting that crisp flavor. You can also muddle lime wedges with the mint, which tastes better in my opinion. Granulated sugar, icing sugar or simple syrup are great choices for sweetening up a mojito. I recommend using my brown sugar syrup or my spiced simple syrup for this recipe. You will also need club soda to make this work. I usually buy two 335ml cans; Schweppes is a great club soda brand that never disappoints me.

Ingredients

4 lime wedges

2 oz (1/4 cup) fresh lime juice

2 tablespoons sugar/simple syrup

10 mint leaves

4 oz light rum

4 oz club soda

8 cucumber slices (half an English cucumber)

4 kiwis, peeled and sliced

Tray of ice cubes

1/4 cup granulated sugar to rim glasses

Mint sprigs to garnish

 

Instructions

  1. Place the granulated sugar on a flat plate.
  2. Squeeze a lime wedge over the rims of two glasses and dip the wet rims into the sugar.
  3. Put in half the amount of mint leaves in each glass and muddle with the lime wedges and sugar/simple syrup.
  4. Add the lime juice, cucumber and kiwi slices in each glass and stir.
  5. Fill both glasses halfway with ice and pour in the club soda.
  6. Serve chilled.
