True story: Palomas are actually my least favorite type of cocktail. But with this pineapple Paloma, it might be my fourth favorite aha! A classic Paloma is very sharp, and sparkly thanks to the soda. This pineapple cocktail is ideal for the spring season because it is super refreshing and fruity.

- Or with just grapefruit soda like Ting, Fresca or Jarritos.

In this pineapple Paloma recipe, I went the grapefruit soda route just to make my life easier since we are already working with many ingredients. You will need a really large pitcher or jug since this makes a large serving of Palomas. Tequila, simple syrup, pineapple nectar/juice and grapefruit soda are the main ingredients here. I recommend using my rosemary simple syrup for this recipe.
Don’t forget to start off this recipe by rimming your glasses with salt. I like to give out this reminder because I always freaking forget every single time. I always have to redo the recipe.
I love using frozen fruit sometimes as opposed to ice cubes because it keeps the drinks chilled without watering it down. Serve this with lime and you’re good to go!
Ingredients
1 cup tequila
1/2 cup pineapple juice
1/4 cup freshly squeezed lime juice
1/2 cup simple syrup
2x370ml bottle grapefruit soda
Coarse salt to rim glasses
Tray of ice cubes
2 cups frozen pineapple chunks
Lime wedges to garnish
Instructions
- Mix the tequila, pineapple juice, lime juice, simple syrup in a large 2L-capacity pitcher or jug.
- Rim 4 tall glasses with lime and dip into salt.
- Fill the glasses halfway with frozen pineapple chunks and/or ice.
- Pour the shaken cocktail into each glass about 3/4 full and top each glass with grapefruit soda.
- Serve chilled for optimal sparkle.
