Feta zucchini salad

I love this zucchini salad so much because it is a very lightweight summer salad. It has bits of feta cheese in it which is so heavenly with the tomatoes, onion and zucchini. To top it off it has a very simple mustard dressing, which you can make with no stress since you most likely have these ingredients at home. Use lots of fresh herbs for a solid, fresh flavorful salad.

Dijon mustard is always highly recommended by me in salad recipes which use mustard as an ingredient. This is because Dijon mustard is packed with more seasoning than regular yellow mustard. Yellow mustard is also made from white and yellow seeds, whereas Dijon mustard is made with black mustard seeds with hints of white wine. Dijon mustard originated in France apparently so it is just overall a fancier mustard-both in flavor and texture.

You could make this zucchini feta salad with your eyes closed. It is just combining sliced tomatoes, onion ringlets, fresh lemon juice, mustard, virgin oil and seasoning. This is best served cold so refrigerate this for at least 1 hour prior to serving. This is similar to a Greek salad in composition so it goes great with rice, roasted potatoes or as a sandwich topper.

Ingredients

3 zucchini, diced

2 tomatoes, sliced into quarters

1 medium onion, chopped

1 cup fresh feta cheese

1 lemon, squeezed

1 tablespoon Dijon mustard

1 teaspoon table salt

1 teaspoon ground black pepper

2 tablespoons chopped parsley

1/4 cup virgin oil

Instructions

  1. Whisk the lemon juice, mustard, salt, black pepper, parsley and virgin oil together in a large mixing bowl.
  2. Add the zucchini, tomatoes, onion and feta cheese to the same bowl.
  3. Refrigerate this for at least 30 minutes before serving.
