Happy New Year! Here is an amazing apple cucumber salad I did last year. It is spiced up a little so it is sweet, crunchy and slightly savory. I used Granny Smith apples, Roma tomatoes, cucumber, onions. This apple cucumber salad is such a good side to any dinner. You just need to toss everything in a huge mixing bowl and refrigerate it for at least one hour.

I find it best to mix the vinegar and oil with the other spices first before tossing it into the apple salad. The best type of tomatoes to be used in this recipe are unripe tomatoes since they have a firm skin. Riper tomatoes are juicier and harder to chop easily. This apple salad can be eaten solo as well. Other add-ins can be crushed nuts, raisins or crispy bacon bits. You can also add lots of freshly chopped herbs as well. The best part is refrigerating this yummy salad for at least one hour before serving to have it marinate better. Ingredients

2 apples, cored and chopped

2 tomatoes, diced

4 small cucumbers, diced

1/2 teaspoon table salt 

2 tablespoons virgin oil

1/4 cup vinegar

2 teaspoons garlic pepper

1 tablespoon parsley flakes

1 tablespoon ground basil

Instructions

  1. Toss everything together in a large mixing bowl.
  2. Refrigerate everything for 1 hour before serving.
