Peri-peri wings in an airfryer

There is seriously nothing better than a large batch of saucy, chicken wings. These lovely peri-peri wings totally fit the bill. I think I first got introduced to peri-peri sauce when I went to Nandos. For those who don’t know, Nandos is a really popular South African restuarant chain which sells grilled Portugese chicken. You can find their original sauces and marinades in some grocery stores so I was excited to make these. Peri peri sauce is really sour and spicy at the same time, and is very similar to hot sauce.

Peri-peri sauce is derived from ground peri-peri (piri-piri) chilis and is said to have originated in Portugal. Peri-peri sauce sometimes includes salt, citrus fruits, onions, bay leaves and other peppers. I usually use chicken wings which are split into drums and wings. However, this time I couldn’t find those so I used the wings which were still attached. I kept the seasonings simple: I used parsley, basil, salt and ginger. The peri-peri sauce is pretty salty on its own so there’s no need to go overboard with the seasonings. I served these yummy saucy wings with extra peri peri sauce but this would go great with ranch or plum sauce.

The peri-peri wings don’t take long to get ready, and are ready in 30 minutes maximum, in the airfryer. However you can also bake them in the oven at 400°F for 40 minutes. Ingredients

2 lbs/1 kg chicken wings

1/4 cup peri peri sauce

1 tablespoon parsley flakes

1 tablespoon ground basil

1 teaspoon table salt

1 teaspoon ground ginger

Instructions

  1. Mix the peri peri sauce with the parsley, basil, salt and ginger together. Rub over the chicken wings.
  2. Air fry at 180°C for 10 minutes, flip and continue airfrying for another 15-20 minutes.
  3. Serve with extra peri peri sauce.
