Jalapeño guacamole

This jalapeño guacamole recipe is incredibly easy to whip up. It sounds fancier than it actually is. All you need are ripe avocados, lime juice, diced tomatoes and chopped jalapeños, salt and a pinch of seasoning. Wear gloves to prep your jalapeños so you won’t have a bad week with burning sensations everywhere. You can jalapeño guacamole on tacos, nachos, sandwiches or in burritos. You can play around with this-take my pine nut guacamole for example. It is the same principle except jalapeños are swapped for pine nuts. Pine nuts are what you use in making pesto, just FYI, and taste similar to almonds.

I prefer using fresh tomatoes which are on the slightly unripe side in any guacamole. This way. they are very easy to dice. I wouldn’t recommend using tinned diced tomatoes because they actually also tend to be mushy and watery. You also need to take out the seeds from the jalapeños so you don’t munch on bits of spicy seeds. I like to add a pinch of black pepper and salt but taste it as you go along to be sure you’re not overdoing it. Simple is best when it comes to guacamole recipes.

So many people give hacks on how to store guacamole without it turning brown in the fridge. I think that’s awesome but personally I don’t find guacamole leftovers alluring at all. It looks really brownish-black, it also gets watery at the bottom sometimes. It’s a no for me personally. You can read this article from Taste of Home if you’re determined to keep leftovers.

Ingredients

1/2 teaspoon table salt

1 teaspoon ground black pepper

Pinch of ginger powder or minced garlic

1 tablespoon lime juice

1 large tomato, diced

4 ripe avocados, pitted

1-2 jalapeños

3 tablespoons cilantro, chopped

Nacho chips to serve

Instructions

  1. Wearing gloves, remove the seeds from the jalapeños and dice them.
  2. Mash the avocados in a large bowl until smooth then stir in the salt, black pepper, ginger, lime juice, chopped tomato, jalapeño and cilantro.
  3. Serve immediately.
  4. Do not recommend stirring leftovers because it turns brown and slightly watery as time goes on.
