Elotes are a Mexican street corn where grilled corn is heaped with mayonnaise, spices, lime and sometimes cheese. This elote salad mimicks that and is so delicious. It has sauteed corn, mayonnaise, Greek yogurt, lime, garlic, ginger, and feta cheese. It is the perfect topping for tacos, burriotos or as a dip for nacho chips.
To start off, you want to get the corn charred like an elote so you will fry the corn until it is deeply browned. After you fry the corn in butter, add it to the remaining salad ingredients. It makes everything incorporate nicely. The best cheeses for this elote salad r ecipe are feta cheese and cotija cheese. Serve immediately for best results.

Ingredients
3 tablespoons unsalted butter
410g can whole kernel corn
1 green onion, chopped
3 tablespoons mayonnaise
2 tablespoons Greek yogurt or sour cream
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
1/4 teaspoon table salt
1/4 cup chopped feta cheese
Instructions
- In a frying pan, melt the butter and fry the corn in it. Stir occassionally. It should be browned and resemble roasted corn (takes about 10 minutes).
- Combine the fried corn with the remaining ingredients.
- Serve immediately.
