These Pride cupcakes come from my pineapple cupcakes with a vanilla buttercream recipe. They are multi-colored and I thought it would be a really fun concept for Pride month. You can get ultra-creative with these cupcakes by decorating them with various sprinkles and edible candy. It definitely takes some effort but you can’t complain when you end up with such lovely, vibrant dessert.
I simply separated the cake batter into bowls and colored each bowl with a different food coloring. So I ended up with 4 cake colors: blue, green, red and yellow. Next, I alternated the cake batter in the muffin tray using spoonfuls. This way, you will end up with color-blocked cupcakes. To make it easier, you can place the batters into separate piping bags and pipe different colors, one after the other, into the muffin tray. You don’t need to stir the batter or anything. I separated the buttercream and colored it into different colors as well. This could be a fun concept for a large group of friends or family to participate in.
For best results, you can use any light colored cupcake batter for these Pride cupcakes. Meaning that it is best avoid darker cake batters like chocolate, taro, red velvet. Go for pale-colored batters like lemon, pumpkin, vanilla or banana. This way, the colors show up nicely in the baked cupcakes.
