The craze last fall was apple crumb cakes! So I decided to make a pear crumb cake this year! They come with a strawberry glaze too and are really delectable pieces of dessert. Imagine an pear cake topped with a cinnamon crumble and a glaze topping. It requires a bit of prep but the results are so worth it.
To start off, peel the pears and chop them just like you would when making apple pie. Then mix the chopped pears with cinnamon and brown sugar. The cake batter is like any regular vanilla cake! I used a simple cinnamon crumble-it consists of flour, brown sugar, white sugar, cinnamon, and melted butter. The strawberry glaze is made from icing sugar, strawberry essence and cream. You can substitute the strawberry essence with vanilla extract. To assemble this cake, layer the cake batter at the bottom of a heavily-greased 9 inch cake pan, followed by the chopped pears and then the crumble.
So midway through the baking, the cake crumble started to brown really fast so i recommend wrapping the top of the cake with aluminum foil. This pear crumb cake is so festive your guests won’t be disapoointed.
Ingredients
Cake
1/4 cup melted unsalted butter or cooking oil
2 large eggs, at room temperature
1/2 cup granulated sugar
1 cup milk, at room temperature
2 &1/2 cups all-purpose flour
2 teaspoons baking powder
Pinch of salt
4 pears, peeled and chopped
1/2 cup brown sugar
1 tablespoon ground cinnamon
Cinnamon crumble
1/4 cup brown sugar, tightly packed
1/4 cup granulated sugar
1 tablespoon ground cinnamon1
1/2 cup melted unsalted butter
Pinch of table salt
1/2 cup all-purpose flour
Icing
1 cup icing sugar
3 tablespoons cream
1 teaspoon strawberry essence
Instructions

Mix the crumble ingredients together.

Mix the chopped pear with the brown sugar and cinnamon. Set aside.

Mix remaining cake ingredients together in another large mixing bowl.

Pour the mixture from step 3 into a heavily greased 9 inch cake pan. Spread the pear mix from step 2 on top.

Top with the crumble topping.

Bake at 350F/175C in a preheated oven for 1 hour, covering halfway with aluminum foil if it starts to brown

Let the cake cool completely. Whisk the icing ingredients together and drizzle over the cake.
