Maple mashed sweet potatoes

by Effy A

Mashed potatoes are lit but mashed sweet potatoes? On another level! These are great but they are not made the same way as regular mashed potatoes. You use less milk and because of the sweetness of the sweet potatoes, allows less room for seasoning. This mashed sweet potato recipe is both savory and sweet with hints of cinnamon and cloves. This will go great with any meaty dinner like pork chops or fried chicken or chicken breast as pictured below.

The key is to chop the peeled sweet potatoes into chunks so it takes a shorter time to get soft. You honestly don’t even need butter but I added some for a bit of richness. Don’t use too much milk; in fact you can skip it altogether if you like. I like to mash the potatoes with all the other ingredients right after it is boiled. You could also use honey instead of maple syrup as a substitute for this recipe.

This was originally made to be served with lamp chops, however this recipe was lost in our big crash. I highly recommend my pulled pork with gravy or coffee-rubbed chicken. These mashed sweet potatoes are great for holiday season as well so bookmark this for any special occasion.

Ingredients

4 large sweet potatoes, peeled

1 tablespoon table salt

8 cups water to boil potatoes

1/4 cup milk or cream

1/4 cup softened butter, cut into cubes

1/2 cup maple syrup

2 tablespoons dried parsley

1 teaspoon ground black pepper

1 teaspoon ground cinnamon

1 teaspoon ground cloves

Instructions

  1. Chop the sweet potatoes into rough chunks.
  2. Add the sweet potatoes to a saucepan that is at least 3 quart in capacity. Add enough water to the saucepan that it submerges the sweet potatoes completely.
  3. Add the salt to the sweet potatoes and boil on high heat until they get soft, which usually takes about 40 minutes.
  4. Drain the water around the sweet potatoes completely and add the maple syrup and butter right away to the potatoes so that the heat melts the butter right away.
  5. Mash the potatoes and add the cream, parsley, pepper, cinnamon and cloves.
  6. Stir until smooth. Check the salt level and adjust as necessary.
