Egg fried rice

I love egg fried rice so much! I make it every time I have leftover rice in the fridge that looks unappealing. This is so delicious that it can be eaten on its own. It has carrots and peas as well.

First off, you fry onions until softened. Then you add in the eggs and scramble it. Next goes in the rice and the soy sauce. Last but not least goes in your tinned vegetables. You could even add tinned corn to this egg fried rice.

Ingredients

4 tablespoons cooking oil

1 large onion, chopped

6 large eggs, whisked

1 teaspoon salt

1 teaspoon ground black pepper

1 can mixed vegetables

4-5 cups day old cooked rice

1 tablespoon soy sauce

Instructions

  1. Fry onions in oil until browned. 
  2. Add in the whisked eggs and scramble them by stirring. 
  3. Add in the cooked rice and add the soy sauce.
  4. Combine until the rice is one color. Add in the mixed vegetables and let it cook for 5 minutes.
