Chicken melt sandwiches

This chicken melt sandwich was inspired by classic tuna melt recipes. A tuna melt is just a cheesy tuna salad sandwich. This is a great way to utilize leftover chicken breast, which is my least favorite part of a chicken. You shred up the chicken breast, turn it into a salad and add cheese. I used shredded cheddar cheese, sliced tomatoes, sliced avocado and this was cooked on the stove top like grilled cheese.

So you have to prep the chicken breast first. Remove any skin or bones on the chicken. Then shred the chicken breast apart with two forks. Then you mix it with the salad ingredients: Mayonnaise, mustard, pepper, salt, onions and herbs. You can even add chopped pickles to your salad. This chicken melt sandwich is just like many any other grilled cheese or panini. You need a heavy object like a cast-iron skillet to press down on the sandwiches. Wrapping the pan with foil allows the heat to be evenly distributed so that all the cheese melts. The saddest thing is biting into a cheesy sandwich only to find that it is not completely melted. Ingredients

Sandwich

8 slices of bread

2 cups grated cheddar cheese

2 avocados, peeled and thinly sliced

2 tomatoes, sliced thinly  

 

Chicken salad

1 small onion, diced

1 cup mayonnaise

1 teaspoon cayenne pepper

2 tablespoons chopped cilantro or parsley

1 tablespoon Dijon mustard

1 tablespoon white vinegar or apple cider vinegar

Instructions

  1. Mix the chicken salad ingredients together.
  2. Grab one slice of bread and spread a generous amount of grated cheddar on it followed by a handful of chicken salad, then add a few tomato slices, and a few avocado slices.
  3. Top with the remaining bread slice. Repeat steps 2 & 3 until all the bread slices and chicken salad is used up.
  4. Melt a few tablespoons of butter on a hot frying pan. Add as many sandwiches that can fit on the frying pan.
  5. Wrap the pan with foil (use mitts to avoid burns) and use a heavy object like a cast-iron skillet or brick to press down on the sandwich.
  6. Once most of the cheese has melted, flip the sandwiches. It should have a golden brown crust.
  7. Repeat steps 5 & 6 for the remaining sandwiches. Serve warm with your favorite dipping sauce.
