This colorful carrot parfait is so delicious and crunchy. It has shredded carrots, strawberry ice cream, chocolate sauce and crushed cornflakes. It totally suits Pride month’s flair. This ice cream parfait just consists of layering the sauce, crushed cornflakes, carrots, ice cream and repeat until you reach the top of the glass. It is so unique and easy to whip up.
The layering is all that matters in this recipe. Start off with a tall glass to show off all your hard work. You can even add sliced strawberries since there’s strawberry ice cream in this recipe. The next best substitute for the carrots is carrot cake. That was initially my plan but the fresh carrots tasted way fresher. I used these combination of ingredients because they are colorful and have a Pride month vibe. You can use my carrot sheet cake for inspiration if you still choose to use cake in this carrot parfait.
Serve this carrot parfait immediately because the ice cream melts faster in hotter weather. Once it melts you lose that creamy consistency and end up with a puddle of watery dessert in a cup. This recipe makes just one serving but you can simply double or triple the quantities for a larger serving. Other ice cream I recommend are my cherry ice cream and coconut choc chip ice cream.
Ingredients
4-5 scoops strawberry ice cream
1/2 large carrot, shredded
Chocolate sauce
1/4 cup crushed cornflakes
Instructions
- Layer the chocolate sauce, crushed cornflakes, shredded carrots (or carrot cake) , icecream and repeat until you reach the top of the glass.
- Serve cold.
