Homemade grapefruit raspberry mint soda

This homemade grapefruit soda is so awesome because it is so fruity thanks to the raspberry mint syrup. The syrup is made from scratch and is just lovely. It is also topped with club soda to give it a nice sparkle and is also crisp thanks to the mint. Sodas can be used in a variety of ways-from adding fizz to cocktails to making other mocktails (non-alcoholic drinks).

The raspberry mint syrup attached makes about 1 cup worth of syrup so frankly you won’t have any leftovers. Making the syrup may sound difficult but it is not a not a big deal. You basically just boil all the syrup ingredients together until the raspberries lose shape (become soggy). Then you mash the raspberries to squeeze out all the juices. You let it steep for a bit for extra flavor. The last stage is straining it to get a smooth liquid.

You will need about 1 liter worth of grapefruit juice for this recipe. Grapefruit juice is often sold in big cartons so it won’t be a problem for you to find. I used two 355ml cans of club soda but you can add more if you wish. For best results, I recommend refrigerating the soda for a few hours prior to serving. It might separate whiles in the fridge but that’s okay. Just stir it thoroughly and enjoy! You can also use this grapefruit soda to make your very own Paloma cocktail. Cheers!

Ingredients

Raspberry mint syrup

1 cup fresh raspberries

1 cup mint leaves

1 cup water

1 cup granulated sugar  

 

Grapefruit soda

1 cup raspberry mint simple syrup

4 cups grapefruit juice

2 cups sparkling water or club soda (I used club soda)

Mint sprigs and/or grapefruit wedges to garnish

Tray of ice cubes to serve  

Instructions

Raspberry mint syrup

  1. Bring the water and sugar to a boil in a saucepan on medium heat, until it dissolves completely.
  2. Add the mint leaves and reduce the heat and continue to let it simmer for another 10 minutes without stirring.
  3. Turn off the heat and add in the fresh raspberries.
  4. Mash the raspberries completely and cover the saucepan with its lid.
  5. Let the ingredients in the syrup steep for at least 1-2 hours. The longer everything steeps, the sweeter the syrup gets.
  6. Strain and keep refrigerated until needed.

Grapefruit soda

  1. Mix the cooled raspberry mint syrup with the grapefruit juice and the sparkling water/club soda.
  2. Refrigerate for a few hours. Stir thoroughly before serving.
  3. Best served chilled over ice.
  4. Garnish as preferred.
