Hibiscus French toast bites with hotdog bread

Hibiscus tea meets French toast in this recipe! You can serve this with honey or maple syrup for a perfect breakfast. Adding fresh fruit to this morning gem is a bonus but it is perfectly optional. This French toast recipe tastes like milk tea in dessert form. Milk tea is basically any tea mixed with milk. It is so supple and creamy-tasting. I boiled Hibiscus tea and mixed it with the remaining ingredients. French toast ingredients include milk and that’s how it became milk tea-based. You can exclude the milk for a stronger tasting hibiscus French toast.

These were made from leftover hotdog bread but you can also use brioche bread. Hotdog bread is the perfect size for French toast bites so it is way easier since you can just slice it into 3 or 4 pieces. This was inspired by Fit Waffle Kitchen. You can also cut a long bread down in half lengthwise and cut them horizontally. You just whisk all the remaining ingredients in a bowl and dip each bread piece into it, ensuring it is evenly coated. I like to place the dipped bread on a baking tray and fry them in batches.

These French toast bites are supposed to be soft but not soggy. I like to fry them on all sides to avoid wet French toast. This is fun, easy and not to be missed!

Ingredients

5 hotdog bread, cut into 2 inch chunks

2 large eggs

1/4 cup unsweetened hibiscus tea

1/2 cup granulated sugar

1/2 cup almond milk

1 teaspoon vanilla extract

Pinch of table salt

1 cup canola or vegetable oil

Instructions

  1. Whisk the eggs, hibiscus tea, sugar, milk, vanilla extract and salt together in a large bowl.
  2. Dip each bread piece into the mixture from the previous step.
  3. Heat 2-3 tablespoon of oil in a frying pan on medium-high heat.
  4. Fry a few of the soaked pieces at a time for 3-4 minutes on all sides.
  5. Repeat steps 3&4 for the remaining batches.
  6. Serve with syrup and/or fruit.
