This fall-toned white sangria has a spiced simple syrup base and has hints of coffee, orange, cinnamon, cloves and apple cider. Can’t think of a more perfect way to end the year. This white wine sangria literally has everything from apple cider juice to coffee. It is a very interesting cocktail and hope you guys end up loving it as much as I do.
Making the spiced syrup
The spiced simple syrup is just full of ginger, cloves, citrus fruits and mint-all cooked with sugar and water. It’s actually also featured in my cocktail recipe book, The Cocktail Pit. It is very good not just for a sangria but you can use this for margaritas, palomas, whisky sours and even non-alcoholic mocktails. To make this syrup, boil the following ingredients on medium heat in a saucepan:
- 1 cup granulated sugar
- 1 cup water
- Peel from 1 orange
- 2-3 cinnamon sticks
- 2 tablespoons whole or ground cloves
- 1 inch peeled fresh ginger
Let the syrup boil for about 20 minutes. Then cover it, and let it steep for at least 2-3 hours. This is what gives the syrup lots of flavor. Strain it and you have your spiced simple syrup. If this is not to your taste, you can just stick to regular simple syrup-which is just boiled equal parts sugar and water.

Ingredients
750 ml bottle white wine
2 cups apple cider (non-alcoholic)
1/2 cup freshly brewed coffee, cooled
1/2 cup brandy (or rum)
1/2 cup simple syrup (see above for the spiced simple syrup recipe)
2x331ml cans club soda
Fresh cinnamon sticks
2-3 Lemons, sliced
1 apple, sliced, to garnish (or other chopped fruit)
Tray of ice cubes
Instructions
- Combine all the ingredients, except the ice and garnish, in a 2L capacity jug and refrigerate for at least 2 hours. The longer you refrigerate the sangria the better it tastes.
- Serve cold over ice cubes.
