Iced lattes are one of my favorite types of coffee beverages and this strawberry iced latte is no different. It is made with a homemade mint strawberry syrup with hints of orange and cinnamon. It is very much spring and so refreshing!
Making the strawberry syrup
The syrup is made just like any simple syrup: boiling water, sugar and fruits. I added in mint, orange zest, cinnamon sticks but you can also add lemon slices. Letting it steep for at least 2 hours allows all the sweetness from the strawberries to seep out properly. The longer you steep the ingredients of the syrup, the sweeter it gets. This recipe makes approximately 1 cup worth of strawberry syrup. You don’t need to use all of it if you don’t want your iced latte to be really sweet. You can gradually add the syrup and taste as you go along. Store any leftover syrup in a mason jar or airtight container for up to 5 days.
Once the syrup is ready, let it cool. Stir it with the brewed coffee, milk and ice. This is really tasty and so addictive so just keep stirring to maximise the flavor of this iced latte. Check out other syrups on the blog for more fun additions to this drink.
Ingredients
Strawberry syrup
2 cups strawberries, trimmed and sliced
1 cup water
1 cup granulated sugar
2 tablespoons orange zest
3 cinnamon sticks
Handful of mint leaves
Iced latte
3/4 cup almond milk/dairy milk
2 cups brewed coffee, chilled
Tray of ice cubes
Instructions
Strawberry syrup
- Boil strawberries with sugar, water, mint leaves, cinnamon sticks and orange zest in a saucepan on medium heat for about 15 minutes until the strawberries are jelly-like.
- Turn off the heat, cover with the saucepan lid and let it steep for 2 hours or more.
- Strain it into a container or mason jar. This is your strawberry syrup.
Iced latte
- Fill two tall glasses halfway with ice, then add half the amount of coffee and milk in each glass.
- Top both glasses with the strawberry syrup.
- Stir well and serve cold.
Notes
Store any leftover syrup in the fridge for up to 5 days.
