Roast pork is always a labor of love kind of deal and this pork loin recipe is slightly different from the norm. This pork loin is so easy to make and delicious! It is seasoned with a brown sugar marinade with a variety of spices and herbs. It is then slowly roasted in the oven for about an hour or more until tender. This is just perfect for making a Cuban sandwich or a club sandwich. I think this roast pork is also suitable for family and special dinners.
For best results, refrigerate the marinated pork for a few hours or overnight. This is a recipe where you don’t actually need to keep watch on the pork as it bakes. Rotate the baking tray you’re using to roast the pork just once to ensure even cooking of the pork. After the pork is done, let it rest for at least 10 minutes to allow the even distribution of the internal juices. If you cut the roast pork too early, it will dry out. The meat might be slightly pink in the center but that’s okay-as long as it has an internal temperature of 145°F (63°C).

Ingredients
12kg/26 lbs pork loin
1/4 cup lemon juice
2 tablespoons brown sugar
1 teaspoon table salt
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon ground black pepper
Instructions
- Preheat the oven to 450°F/230°C. Line a large baking tray with foil and place a wire rack on top.
- Whisk the lemon juice, brown sugar, salt, garlic, Italian seasoning and black pepper together in a bowl. This is your marinade.
- Pat the pork loin dry with paper towels and rub it with the marinade.
- Place the seasoned pork on the wire rack, fatty side up.
- Reduce the temperature after 10 minutes to 350°F/175°C and let it cook for another 45-50 minutes (or longer depending on the size of your pork loin), rotating the pan halfway through to ensure even roasting.
- The internal temperature of the pork should read 145°F (63°C). Let the pork sit untouched for at least 10-15 minutes.
- Slice as needed and serve with roasted potatoes or fried rice.
Notes
Store leftovers in an airtight container in the fridge for up to 5-6 days.
