This pineapple cucumber smoothie bowl is so awesome and refreshing! All you need are frozen cucumber, pineapple, chia seeds and milk. I added in toasted coconut flakes as well for an interesting taste. I bought the toasted coconut but you can make it from scratch by baking shredded coconut in the oven for a few minutes.
The frozen fruits make the pineapple cucumber smoothie bowl the perfect texture. It has a slightly grainy taste and tastes mostly like sweet cucumber. It is super refreshing and a great way to start your morning. Health benefits of chia seeds includes providing amino acids, fiber, antioxidants, lowering cholestrol and more! This popular ingredient is so perfect for puddings and baked treats. I also grabbed an entire whole pineapple for this recipe. It amounts to roughly four cups worth of chopped pineapple. I like to keep everything frozen at least 24 hours prior to making the smoothie. I use almond milk but plain yogurt would help make the smoothie bowl thicker.

Ingredients
1 whole pineapple, peeled, chopped and frozen
1 English cucumber, chopped and frozen
1/2 cup almond milk
1/2 cup dried coconut flakes
2 tablespoons chia seeds
2-3 tablespoons honey
Instructions
- Blend everything until smooth.
- Pour into two bowls.
- Garnish as preferred and serve immediately.
