Peach pistachio yogurt parfait

This peach parfait is no-brainer even though it looks fancy as hell. The trick to any good parfait is the layering-there is yogurt, fruit, nuts, whipped cream and crushed biscuits. This summery dessert is best eaten cold and is so perfect for the spring and summer. There are two types of parfait-the ones which are served in breakfast menus with plain yogurt and granola. And the fancier type which is made with soft serve ice cream.

To make this peach parfait, simply alternate layers of crushed pistachios, peaches and Graham crackers until the glass is full. Pistachio nuts are usually sold whole so you will have to do a bit of prep by removing the shells and crushing them yourself. I used a rolling pin to help me crush them. Since a parfait is all about the layering, a tall glass works best for this recipe. I topped this up with a handful of shredded coconut and coconut whipped cream but the possibilities are endless. You can swap the whipped cream for ice cream, add in sweet syrups, compote, jam or even chopped chocolate.

Ingredients

3-4 cups tinned or fresh peach slices

2 cups pistachios, shells removed and crushed

3 cups Graham crackers, broken into pieces

3 cups plain yogurt

1 cup shredded coconut (optional)

Whipped cream to top

Instructions

  1. Refrigerate the peach slices to ensure that they are cold before assembling the parfait.
  2. Place 2-3 tablespoons of plain yogurt in two tall glasses each.
  3. Alternate layers of crushed pistachios, peach slices and Graham crackers.
  4. Repeat steps 2&3 until each glass is full.
  5. Top with a handful of shredded coconut and whipped cream.
  6. Serve immediately for best results.
