Peach bourbon cobbler

There have been many debates over the type of cobbler which tastes better-whether it should have a biscuit topping or not. I don’t really mind about this. This recipe has a buttermilk biscuit-like topping that covers the entire cobbler. But it is super delicious and smells incredible. It also has a splash of bourbon which acts like how vanilla extract is used in baked goodies. There are few things in this world that beat warm peach cobbler with chilled ice cream.

The cobbler topping doesn’t have to be over-mixed. It is combined just enough till it resembles lumpy oatmeal. This is what turns it into a biscuit-like topping in the oven. The peaches are cooked on the stove prior to making this as well. I use tinned peaches because they are cheaper and easier to find, when peaches are out of season. Tinned peaches are also pre-peeled so you don’t have to spend minutes prepping them. The incredible part about baking peach cobbler is that it tastes great either served cold or warm. So it is an all-season type of recipe, which I stan.

This recipe would be awesome with some homemade ice cream like my no-churn maple ice-cream. Happy eating!

Ingredients

Peach mix

5 cups tinned peach slices

1/2 cup granulated sugar

3 tablespoons bourbon (or whiskey)

1 teaspoon ground cinnamon

1 teaspoon lemon juice

 

Cobbler topping

1&1/2 cups all-purpose flour

1/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon table salt

1 cup buttermilk, or heavy cream

1/2 cup unsalted butter, melted

Instructions

Peach mix

  1. Heat all the peach mix ingredients in a saucepan over medium heat.
  2. When the mixture bubbles and becomes watery-looking, turn off the heat.

Cobbler topping

  1. Preheat the oven to 375F/190C.
  2. In a large mixing bowl, combine the all the cobbler topping ingredients, adding the buttermilk/cream last, until the batter is just moistened. The batter should be quite lumpy and resemble coarse oatmeal.
  3. Grease a 10-inch pie pan with lots of butter, pour in this batter into the pie pan and top with the cooled peach mixture.
  4. Bake this for 40-45 minutes in the preheated oven at 375F/190C until the top of the peach cobbler is a deep golden brown.
  5. Serve this warm or cold with your favorite ice cream.
