Milo chocolate chunk brownies

Brownies are great but these Milo brownies are even better. Milo is a chocolate powder that is mixed with hot water to make hot chocolate. It is so popular in my country, Ghana, that I had to do it for the culture. Milo is served at every breakfast and even lunch sometimes. These Milo chocolate chunk brownies are so addictive with a perfect crinkle top. These go great in an ice cream sundae too.

To make good brownies, here are some key points:

  • Cream the butter and sugar for at least 2-3 minutes. This creates the crinkle top experience that we all love in brownies.
  • Sift the flour and cocoa powder before adding it to the batter.
  • Don’t overmix-stir with a spatula wherever you can.
  • As with most baked goodies, keep all the ingredients at room temperature before starting this recipe.
  • Add a pinch of salt to balance the sweetness of the brownies.

Under-baking your brownies are what give it a fudgy, moist texture. I think any baking period under 30 minutes at 350 Fahrenheit is great. Over-baking will cause the brownies to dry up and taste like a cake. When you take the brownies out of the oven, they may feel wet so let it cool completely first before cutting into it.

Ingredients

1/2 cup unsalted butter, melted

1 cup granulated sugar

2 large eggs, at room temperature

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 cup all-purpose flour

1/2 cup Milo

1/2 cup chocolate chunks (add more if you want)

Pinch of salt

Instructions

  1. Preheat the oven to 350F/175C.
  2. Lightly grease a 8-inch brownie pan and line it with parchment paper. Let extra paper hang on both sides of the pan for easier removal of the brownie.
  3. Whisk the butter and granulated sugar for at least 2 minutes using a stand or hand mixer. Then add the eggs and the vanilla into the same bowl.
  4. Sift in the Milo powder and the all-purpose flour into the same bowl. Do not whisk; instead use a spatula to fold it in.
  5. Add in the salt, baking powder, and chocolate chunks gently using a spatula.
  6. Pour the batter into the brownie pan and bake for 25 minutes in the preheated oven. Try not to bake your brownies past 30 minutes because they will dry up.
  7. Let it cool on a wire rack and serve as preferred. You can eat these brownies solo or with your favorite ice cream.
