Roasted chicken with green sauce which is super tender, juicy and spicy. A great and easy dinner for any occasion. The green sauce marinade is completely blended with lots of onion and peppers. It’s actually easy to prepare since it’s a chicken roast recipe. I used chicken legs for this recipe but it will work wonders on a whole chicken or even chicken wings. If you want to take this to the next level, don’t hesitate to marinate your turkey with this! The marinade makes a large serving so you can use it on over 1kg worth of meat.
To start off get some garlic cloves, habanero peppers (or scotch bonnet peppers), onion, green onion, and green peppers. The seasoning I used here was salt and ginger. The spice level is quite high so I didn’t use any black pepper. Feel free to add in herbs like sage, parsley or rosemary for a heavenly aroma.
All you have to do is marinate the meat with the blended sauce and roast it in the oven at a high temperature. The sauce sort of “steams” the chicken as it bakes simultaneously so you can expect really tender, moist chicken. It reminds me of how we boil chicken before adding it to soup in my country.
This green sauce chicken goes great with fried rice, baked potatoes or noodles! Enjoy!
Ingredients
4 habanero pepers, stems removed
4 green onion stalks, trimmed
6 garlic cloves
1 large onion
2 large green peppers, seeds removed
2 tablespoons table salt
1 tablespoon ginger
4 tablespoons cooking oil
1/2 cup water
0.5kg/1lb (or more) chicken legs
Instructions
- Blend all the ingredients except the chicken until smooth and spread over chicken.
- Bake at 450F for 1 hour 15 minutes in a baking pan, turning mid way.
- Serve with rice or potatoes.
