Dorito chicken tenders (fingers)

These are chicken tenders which are coated in Dorito crumbs and baked into crisp perfection. Doritos are these spicy popular chips, and you can find them anywhere. These Dorito chicken tenders are also very good when fried. So you could go either way, though I think the fried tenders tasted way better. These are so good when you are lounging in your room on a chill Friday night about to tuck in for the night.

I’ve made this recipe many times and they are good whether they are baked or fried. The fried ones taste a bit better though, in my opinion. But it’s totally up to you. I’ve used both a rolling pin and a food processor to crush the Dorito chips. All that matters is that the Doritos are crushed into fine crumbs. Baking them lets the chicken stick to the rack so grease the rack before placing the coated chicken on it. I personally prefer frying the chicken tenders but I just thought I’d share this alternative for those who prefer healthier recipes. Frying the Dorito chicken tenders takes about the same total cooking time as baking the chicken tenders.

Ingredients

0.8kg/2 lbs chicken breasts, boneless and skinless

1 cup all-purpose flour

 

Dorito coating

4 cups crushed Doritos (I used a 230g Dorito bag)

1 tablespoon oil

 

Dipping batter

2 large eggs

1/2 tablespoon salt

1 tablespoon cayenne pepper

2 teaspoons dried parsley

1 tablespoon garlic powder

Instructions

  1. You can pulse the Doritos in a food processor or by simply crushing it in a Ziploc bag.
  2. In a bowl, mix the Dorito coating ingredients until combined.
  3. Mix the dipping batter ingredients in a separate bowl. 
  4. Pour the flour on a large plate.
  5. Cut the chicken into thin 2-inch-wide strips.
  6. Place each chicken strip onto the flour pate and then into the dipping batter bowl. Do this in this specific order to allow the crumbs to stick to the chicken.
  7. Line a baking tray with aluminum foil and place a wire rack on top of the lied baking tray. Heavily grease the rack.
  8. Place your coated chicken strips on the rack and bake in a preheated oven at 400F/205C for 15-20 minutes. There should be no pink centre- just white meat all through.
  9. Serve warm. 

Frying the chicken tenders

  1. If you don't want to bake them, you can fry them too.
  2. Heat about 3 cups of oil in a 10 inch skillet until the internal temperature reads 350°F/175°C.
  3. Fry the tenders for 3-4 minutes on each side in batches in the hot oil until they are crispy looking and lightly browned.
  4. Let the fried tenders cool on a wire rack and serve with your favorite dipping sauce.  I highly recommend my avocado coconut sauce.
