Chicken BLT

“BLT” stands for bacon, lettuce, tomato which is assembled in a sandwich. This is an old school sandwich that I had to put on the blog just in time for the summer. A BLT is commonly served the classic way with mayonnaise or some form of dressing. But I decided to add in pan-fried chicken breast to spice it up a lil bit. I used bacon-wrapped chicken breast to make this, but you can use crispy breaded chicken too. You can also cut up rotisserie whole chicken from the grocery store and use the breast in this chicken BLT.

For lettuce, I used iceberg lettuce. I used semi-ripe beefsteak tomatoes so slicing them wouldn’t be difficult. So ideally buy the tomatoes about a day or two before you make this recipe so that it doesn’t get too soft. Slicing an overripe, squishy tomato is literally one of the worst things to happen to mankind-and it doesn’t matter how sharp your knife is. The bacon should be fried until crispy. I never use oil to fry my bacon. Rather I use a non-stick frying pan and let the bacon cook in its own fat. You need to be patient when making crispy bacon. Let it fry for as long as possible on both sides. Once it looks dried up and dark in color, transfer to paper towels to blot out the excess oil.

Toast your buns on an ungreased frying pan. This will ensure that the edges are crispy and won’t fall apart easily once you assemble the chicken BLT. I used spicy mayonnaise-which is literally just mayonnaise mixed with hot sauce. Additional toppings could be relish, hot sauce, hot peppers or sliced avocado.

Ingredients

BLT sandwich

4 hamburger buns, sliced lengthwise and toasted

8 bacon rashers, cut in half

2 lettuce leaves, rinsed and cut in half

1 tomato, sliced thinly

Cooked chicken breast, cut into 4 pieces

 

Spicy mayo

1/2 cup mayonnaise

2 tablespoons hot sauce

 

 

Instructions

  1. Fry the bacon in its own fat in a frying pan until it looks stiff and very browned.
  2. Drain the fried bacon on paper towels.
  3. Mix the mayonnaise with the hot sauce and spread it across the inner sides of each bun half.
  4. Place lettuce and tomato slices on one of the buns followed by chicken breast and bacon.
  5. Place the remaining bun half on top.
  6. Repeat steps 4-5 for the remaining buns.
