Breakfast sausage and egg quesadillas

These breakfast quesadillas are such a convenient breakfast and are freaking delicious. I call them breakfast quesadillas because they have fried eggs and chopped sausages pressed unto the tortilla. You can also use ham, fried bacon or other cold meats you prefer. I also added sautéed onions and mushrooms. This is almost as good as my pesto bagel grilled cheese and steak and egg burritos.

To make this breakfast quesadilla, press a tortilla on whisked eggs on a hot frying pan. Flip, add the cheese and let it melt. I like using cheddar or mozzarella for quesadillas because they are usually always in my fridge. But you can experiment with Jack Monterey or even Parmesan cheese. Serve these warm with your favorite salsa and you’re good to go!

Ingredients

8 large eggs

4 medium tortillas

3-4 cooked sausages, slices (I used beef wieners)

1 cup sliced cooked mushrooms

1/2 onion, sliced

1 cup fresh mozzarella, shredded

1 cup fresh cheddar, shredded

Pinch of table salt

Ground pepper

Dried parsley

Cooking oil

Instructions

  1. Beat two eggs at a time with a pinch of salt, parsley and pepper.
  2. Place the whisked eggs in a greased frying pan.
  3. Place one tortilla immediately on the egg. Flip the tortilla when the egg is cooked and add a handful of the shredded cheeses until they are all melted.
  4. Add the mushrooms, onions and sausage on the tortilla.
  5. Flip the tortilla in half or you can place another tortilla on top. Cook for another 2 minutes until the bottom looks browned.
  6. Repeat steps 1-4 for the remaining ingredients.
  7. Cut into wedges and serve hot.
