If you loved my walnut banoffee pie recipe, you’ll love these banoffee pie cups. They are basically miniature pies layered in a glass and are so,so, so good! This dessert feels like a warm hug and perfect for serving on Halloween weekend parties.
To start off, you prepare the biscuit crumbs. You can get store-bought packaged crumbs or crush a couple of biscuits into crumbs. For this casual recipe, you can use either a rolling pin or food processor to crush the biscuits. Then you mix the crumbs with melted butter and brown sugar. You also need some caramel sauce. If you don’t have caramel sauce the next best option is dulce de leche. You can usually find cans of dulce de leche in the same aisle as condensed milk in grocery stores. If you still can’t find dulce de leche you can cook your condensed milk into dulce de leche. This recipe shows you how to do this.
You want firm bananas for this recipe so it tastes better and is easier to slice evenly. You can whip your own whipped cream but I preferred to use a can of whipped cream. Much simpler and less messy. Refrigerate the banoffee pie cups for a bit to get them chilled but it can be eaten right away.
Ingredients
12 buscuits, crushed into crumbs or 1 cup biscuit crumbs
1/4 cup melted unsalted butter
1 tablespoon brown sugar
340g caramel (or 1 can dulce de leche)
1 can whipped cream
8 bananas, peeled and sliced
Instructions
- Mix the crumbs with the melted butter and brown sugar.
- Press the crumbs into the bottom of 4 cups/short glasses.
- Spread a few tablespoons of caramel in these 4 cups/glasses.
- Place as many bananas as can fit on top of the caramel.
- Spread whipped cream on top.
- Serve cold.
