Apple pie bread pudding

It’s the first day of December so I’m totally ready for the festive season. This festive apple bread pudding is made with stewed apples, raisins and everything that’s good in this world. The concept of stewing the apples is similar to how we make apple pie.

The apple pie mixture is made from cooked apples in lots of sugar. This allows the apples to be sweeter and have a smoother texture. Don’t forget to peel the apples and chop and core them before cooking them up. When you don’t peel the apples, it tastes weird in the bread pudding.

The type of bread you use really affects the bread pudding. Brioche bread is very sweet and buttery so it would work wonders for this recipe. Another key thing is using stale bread, aka bread that has been out for 3-4 days. Soak the bread and raisins in the milk mixture to get it softened up prior to baking. I love serving my bread pudding with chocolate sauce because it is the common sauce in my fridge. Caramel or maple syrup will also be the next best thing. This apple bread pudding is perfect for the holiday season because it is so sweet and very fancy.

Ingredients

Apple pie mixture

3 Granny Smith apples, peeled and cored

1/4 cup brown sugar

1/4 cup granulated sugar  

 

Bread pudding

3 large eggs, whisked

2 cups whole milk

385g condensed milk

1 cup granulated sugar

1 tablespoon vanilla extract

1/4 cup melted butter

1 cup raisins

1 stale bread loaf, cut into 1 inch cubes

Extra butter to grease

Instructions

Apple pie mixture (follow list)

  1. Heavily grease a 13x9 inch pan with softened butter.
  2. Place the chopped bread into pan.
  3. Chop the peeled apples into 1 inch cubes.
  4. Heat the apples with the brown sugar and granulated sugar in a saucepan over medium heat.
  5. Let it cook for 10-15 minutes until the apples look softened and browned.

Bread pudding (follow list)

  1. Mix the eggs with the milk, sugar, vanilla extract, melted butter and raisins.
  2. Stir in the cooked apple mixture and pour it over the chopped bread.
  3. Wrap the top of the pan with foil and let it soak for 30 minutes.
  4. Preheat the oven to 350°F/175°C and bake uncovered for 20 minutes. The top of the bread pudding should be browned.
  5. Keep leftovers for up to 3 days.
