Pecan white chocolate chip blondies

These pecan white chocolate chip blondies are so soft, delicious and made all in one bowl. Blondies are not to be confused to with brownies. There is a difference between blondies and brownies but it’s not something you should worry about. They are both delicious and that is all that matters.

The most important thing is to cream the butter, brown sugar and granulated sugar until it goes pale in color. This is what will make it soft, just like how you make a cupcake. Then you slowly combine the other ingredients. The white chocolate chip are a must as well as the pecans-they compliment the buttery taste of these blondies really well. These are quite oily so I wouldn’t recommend using more than 3/4 cup worth of pecans.

I always recommend baking your brownies and blondies for less than 30 minutes. You don’t want them to dry out because the longer they bake, the less fudgier they tend to be. So you can check the oven around 20 minutes. Usually, once I start smelling a fragrant kitchen, I know the brownies/blondies are almost done. You can serve these with vanilla ice cream in a bowl to make a sundae or something nice like that.

Ingredients

1 cup unsalted melted butter, cooled to room temperature

1 cup packed dark brown sugar

1/2 cup granulated sugar

2 large eggs, at room temperature

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon table salt

1 teaspoon baking powder

1 cup white chocolate chips

1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F/175°C.
  2. Lightly grease a 13x9 inch baking pan and line with parchment paper, leaving about 2 inches to hang on the sides of the pan (it makes it easy to remove the baked blondie from the pan).
  3. Using an hand or stand whisk, beat the butter, brown sugar and granulated sugar together for 2 minutes. Then whisk in the eggs and vanilla extract into the same bowl.
  4. Using just a spatula, fold in the flour, baking powder, salt into the same bowl. Then add in the pecans and chocolate chips last.
  5. Pour this batter into the lined baking pan and bake for 25 minutes.
  6. Let the blondies cool in the pan for a few minutes then transfer it to a wire rack by holding the overhanging parchment paper on the sides of the pan.
  7. Once the blondies cool, cut them into squares and enjoy!
